Well the samples are lined up on timecoded records for them so they never need to change position. This is the contempo! I haven't seen a big DJ NOT using TTs like that in a few years now. BUT I reckon what we hear on that video is a sequenced studio version of the DMC track and they're simply miming to it. There's another video here of the original stage recording, it sounds much more raw and messy.
